Light Summer Pasta Salad for Ovulation Phase

Delicious summer dinner meal with a light pasta salad, green beans, roasted potatoes, and air fried chicken wings.

Recipe for pasta salad:

-Pasta of choice

-Cucumbers

-Tomatoes

-Red Onion

-Banana Peppers

-Salami

-Fresh Basil

-Feta

-Olive Oil

-Salt

-Lemon Pepper or Black Pepper

-Lemon

Step: This pasta salad is quick and easy to make! Cut up the vegetables into small pieces (cucumbers, tomatoes and red onion.) Then, slice the salami and basil into thin slices so they are longer pieces rather than cubed (almost the size of the pasta that you’re using so you can taste each bite.) For the banana peppers, I used peppers that were pre sliced but if the ones you have don’t come slice, make sure to cut those up too!

Step: Now it is time to make the pasta, here I used the fusilli corti bucati pasta from trader joes. Bring a pot of water to a boil and be heavy handed when adding in the salt. Once it’s boiled, add in the pasta of choice and cook according to the directions on the package.

Step: Once the pasta is done, add it into a serving dish. Then add in all of the cut on vegetables and the salami and basil, add in crumbled up feta cheese, drizzle over some olive oil, add in salt and lemon or black pepper. I also like to add in a little bit of garlic powder because I love garlic and red pepper flakes for some spice. A nice squeeze of lemon juice on top and ready to serve :)
